Is it warm or cold where you are? It is the end of January 2023 & it is cold outside here!
What kind of food do you eat in January?
Where I live it is WINTER! Cold & snowy. Some days are so bright & sunny which usually means it is really cold out! Some days are grey & there has been so much fog lately! Luckily I do like the winter! The snow is beautiful & the trees are so lovely when they are covered with hoar frost. Here is a picture of the trees by my house.
Pretty right? It was cold out that day but you can see the beautiful blue sky!
This is what it was like in LA California in November. A bit warmer :))
When I think about the food that I cook I usually cook by the season we are in. Here we get 4 seasons. Summer, Fall, Winter & Spring. To explain, we don’t often BBQ in the winter since the bbq is usually covered by snow! So I tend to make cozy food, like soups & heavier meats….briskets, chilli etc. I was thinking today that of course so much of the world & my readers are in warm climates. But I also realize that most people probably cook whatever they feel like eating & perhaps are not dictated by the weather! How do you cook? Like me? Or whatever you feel like eating?
Soups are always on my menu rotation & I love making them in my Instant Pot. I just put it together & leave it alone! Of course I do not make all of the soups on the Blog marilyndishes.com in the Instant Pot. You can search the soup section of the blog or search for Instant Pot & recipes that I have made in the IP come up!
This week I revisited an old favourite recipe of mine. Vegetarian Onion Soup The recipe is from Martha Stewart. (this is not cooked in an IP) I have changed it up a bit but not much. When Murray & I got married in 1979.. many years ago, we were given a set of onion soup bowls! I am sure they would be good to for other things too but I have only ever used them for onion soup! And I only make the above recipe! It is very delicious & flavourful.
I have posted 6 soup recipes but there are so many more! Every recipe on the Blog is great! We have eaten all of them many times & I assure you they are good!
Here are the links to the soup recipes in my latest blog post! Many of my soup recipes are vegan! Nothing is lost in taste by not using a chicken stock!
I do not have pictures of this soup!! But I guarantee it is delish!
Chicken Soup in the Instant Pot with matzo balls!
Green Lentil Soup in the Instant Pot
Carrot Soup with Ginger & Curry
Thai Chicken Soup with Rice Noodles
I hope you like these soups as much as I do, and Murray likes them too! I always give our son some soup too! All of these recipes freeze really well. I like to use glass mason jars to freeze my soup but remember to leave room at the top for the soup to expand otherwise your jar will break!
Let me know if you make them & what you think! Thanks for reading my newsletter! You can follow me on Instagram, Facebook, TikTok & of course my blog!
Loving the new format!! Keep going!
