My New Fav Oatmeal Cookies with Raisins * I do like other oatmeal cookies & I keep finding new favourite ones so I should be careful calling them 'my fav'!
I went grocery shopping today & wanted to buy cookies. I looked at the price & they seemed so expensive so that’s why I came home & made cookies. I knew I had all of the ingredients that I needed to make these. Grocery shopping is frustrating. The packages are smaller & the prices seem higher than before. I bought some granola bars * Quaker Chocolate Chip ones & they seem to be half the size as they used to be!! The price of produce is high as well. I am very careful not to ‘over buy’ so that there isn’t much waste. But the good thing is I found this really good cookie recipe! Let me know if you make them & what you think about them!
I have a few different Oatmeal Cookie Recipes on the blog & they are all good. Each one different Zelda's Oatmeal Cookies these cookies are not too sweet & domed. This recipe My Fav Oatmeal Raisin Cookie was my favourite is now ‘one’ of my fav recipes!!! Chewy Oatmeal Raisin Cookies by Martha Stewart has now become another fav of mine!!
These Martha Stewart Cookies are perfect which is not surprising to me since I like Martha Stewart recipes. I will put the recipe here so you can all go directly to your pantry & make these! If you don't want raisins in them omit & add chocolate chips! The cookies are chewy inside & have a nice crisp outer.. not too sweet…just right for us! Murray was so happy when he walked in to a batch of his fav kind of cookies.

Ingredients
6 tbsp ( 3 oz) butter *** mine was cold so I used my food processor to mix the butter & sugars & it worked well. If you don’t want to use a food processor your butter should be room temp
1/2 cup brown sugar
1/4 cup granulated sugar
1 tsp vanilla extract
1 large egg
1 1/2 cups rolled oats ( not quick ones)
1/2 cup flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup raisins
My Method
Preheat your oven to 350f & line 2 cookie sheets with parchment paper
Cream the butter, brown sugar, granulated sugar together in a food processor until smooth. Add the egg through the feed tube & mix until well combined. Put this mixture into a large bowl. You will mix the dry ingredients in by hand! Add the oats, flour, baking soda, salt & raisins to the bowl & using a stiff spatula or a dough whisk if you have one, mix until everything is combined well. (This is easy to mix by hand once the butter, sugar & egg are soft & smooth.)
Using a cookie scoop or a tablespoon, put cookie dough onto the prepared baking sheets leaving a couple inches between each cookie as they spread. I used a 2 tbsp cookie scoop & this was a perfect size for us! Bake for approximately 12 minutes or until the cookies are baked through & nicely browned. Let cool on the baking sheet for a few minutes then move to a cooling rack to cool completely ( though I could not wait & ate a couple while warm but not hot!)

Banana Pudding This recipe is based on the one from Magnolia Bakery which is in NYC I have seen many recipes for this & I am not sure if they are actually from the bakery or just what people think the recipe is. Either way this is delicious. I had to change it a bit. The recipe called for Vanilla Wafer which I did not have so I used Graham Wafers. This was just so delicious.
Jane’s Tuna Casserole is named for my friend who gave me the recipe. I have made this recipe for years & it never disappoints! When I make it, this Tuna Casserole is always exactly what I am craving at the time!
