New Food Trends
I try to stay current with new food trends. When kale was the food of choice I jumped on the band wagon & started making all kinds of salads with Kale. I am sure we over-ate Kale since I do not really make many Kale Salads today but when I do I make a slaw with Brussels Sprouts. I posted that recipe in last weeks newsletter but here is a link to it if you missed it.. My husband says that Kale salads involve too much chewing! So funny. I do always have a bag of chopped frozen kale so that I can add the kale to soups, lentil dishes & any other saucy meal. I use the frozen kale & frozen spinach often to add nutrients.
This year I see that dates are the ‘now’ food. We love dates so this works well for us! I don’t have to really change much to be current with dates! We use dates in our smoothies to sweeten them. I like to add dates & prunes actually to pot roasts to give the dish a nice sweet flavour but not sugary. Dates are a great snack when I go to the pantry to find something to eat! Slicing the date down the middle and then putting peanut butter in them is delish. I see all over Instagram & TikTok to coat the peanut butter dates in melted chocolate, pop them into the freezer to firm up & then you will have an amazing snack.
Date syrup has been a staple in Middle Eastern food forever I think! I see it often in recipes. I always like to have some in the house. It is delicious on toast & ricotta. Just drizzle some date syrup over the cheese… amazing! I love sweet food so everything with dates & date syrup works for me!
It is fun to stay on the food trends I think. Adapt them to your taste but it can introduce us to new foods that are not in our everyday meal plans!
Just a thought if you need a quick idea for dinner on night.. I buy the bag of Organic Brown Rice Ramen from Costco so I always have this ready for dinner. Using a large frying pan with high sides or a wok, stir fry whatever veg you like or have in the freezer. Add some sauce, sometimes I make a sauce but using a store bought one you like is so easy. If things get watery from frozen veg you can make a quick slurry by dissolving a couple teaspoons of corn starch in water to make a paste, add this to the veg & cook until this thickens. If it gets too thick * which happens to me often * stir in some water or veg broth a bit at a time to loosen up the sauce up. Turn the heat off but leave the veg in the pan. Boil the ramen according to the pkg instructions. Just before this is done, turn the heat back on the veg, add the noodles right from the pot. Mix well & season to taste, adding salt, more sauce, some soya sauce, some hot sauce…whatever you like. Turn this to low & keep an eye on it so things don’t start to stick. I love to add a fried egg on top of my noodles..this is so delish & quick. Fry your egg anyway you like a fried egg. Dish out some noodles & veg into a bowl or on a plate & put your egg on top. That’s it!! Lots of writing about this but so easy & quick. I cooked Murrays egg in some chilli crisp since he like spicy food. Here is a picture of last nights dinner. I used bok chop, mushrooms, bean sprouts, some frozen broccoli/cauliflower/carrot mix & a couple sliced green onions. (I had that little egg roll in the freezer)
