I did not do much blogging last week but reposted some Passover recipes & a really delicious chicken recipe!
I think that that even if someone does not celebrate Passover, matzo is something everyone could enjoy! It is really just like a cracker or flat bread that is a great base for many things!
How would you eat matzo… here are some delish ways!
I love matzo spread with butter or peanut butter or cream cheese .. jam shmeared on top of all of those! It can be used for a quick pizza like a tortilla, put some sauce on, veg & cheese & pop into an oven so the cheese melts or even the microwave if you are in a hurry! What about avocado matzo? Delish! You can put anything on a piece of matzo really. Cold cuts, tuna, egg salad. It would just be like an open=faced sandwich!
My absolute fav is Matzo Brie ( fried matzo). it is kind of like French Toast. You crumble up some matzo, put it into a colander & run water over it so it gets soft, not too soggy. You have to mix it around a bit so all of the pieces get wet. Set aside so that the water drains off while you mix up some eggs. Into a big bowl, beat some eggs. The amount depends on how much matzo you are cooking but if you are making 6 matzo boards let’s say, beat 4 eggs with a splash or two of milk or water, add salt. Then take that soggy matzo and mix it into the eggs making sure all of the matzo is coated with the eggs. Now, heat some oil in a frying pan with high sides if you are making lots. When the oil is hot ( not smoking) add the matzo. Mix the matzo around so it breaks up into pieces. Some people like to make their Fried Matzo like a big pancake but I like to have broken up pieces. Then cook it until all the egg is cooked. You can have it soft or crunchy! Add more oil as needed. We have a combo since Murray likes it soft & I like it crunchy! There are so many ways to eat this! Pour some maple syrup over…. sprinkle with sugar….sprinkle with cinnamon sugar… or have some jam on the side.
Most of the time during the week of Passover I make simple food. Lots of vegetables & potatoes with whatever protein we feel like. But first we eat the leftovers from our seders for a few days!

Orange Honey Chicken
This recipe is great all year & can easily be made for Passover. You can coat the chicken in bread crumbs or matzo meal. The chicken is coated with crumbs, fried quickly then baked in a delicious Orange & Honey sauce!
This next recipe is for a Chocolate Mousse Matzo Cake.. I think you could try to use some kind of biscuit instead of the matzo! Something not too sweet like a graham wafer. A tea biscuit would work best I think!
