There are Good People Out There!
So the other day I lost my credit card, bank card & drivers license at Costco. Someone found them & turned them in to the office! I am so grateful to them. And, I am not really surprised that someone turned them in. I have always thought that people do the right thing… most of the time! That there are fewer people who don't then there are who do! Someone stole my phone once, I think I left it at a store… they were one of the ones who are not the best! But overall, I truly believe people are good.
What do you think?
I wonder what determines a person’s character? If they care about their neighbour? I have rarely come across anyone who wouldn't help another person.
I digress… I really just wanted to share my story about the person who was kind & honest, who found my cards & turned them in!
In case you were wondering how the fires are doing in Alberta, from last weeks blog, there are fewer fires & the air quality in our city is better. Sometimes we can still smell smoke but not that often & the sky has been blue!
Let’s get to the food!
I made the Ted Lasso Shortbread Cookies yesterday. After watching the show for all three seasons & seeing those cookies I decided it was finally time to make them. I used the recipe from The Kitchn. They are delicious. Here is the link to the recipe & a picture of mine. I baked them in the bottoms of old metal ice cube trays. They are tender & delicious ( I did not have salt free butter so I did not add the salt called for in the recipe. Even if you have never watched the Ted Lasso show, you should make these cookies!

I made a dry spice rub that I use on Salmon. You can use it on chicken or on roasted veg as well instead of just using salt! I always like to have some of this spice mixture in my spice cupboard so I can use it whenever!
I like Carrot Cake! Some of the commercial ones are too sweet for me, though I still eat it! But, this recipe for Triple Layer Carrot Cake is amazing. The recipe is from Chatelaine Magazine. I have had the recipe for many years!
