The original recipe is from Salt & Lavender, I changed up a bit to suit my taste!
Here is my recipe
Beef Ramen Noodles
4 cups frozen broccoli
1/2 red pepper, chopped * you can use any colour you want!
1 can sliced mushrooms, drained * I like using canned mushrooms but use fresh if you prefer!
1 lb ground beef * you can use any ground meat or crumbled tofu!
3 tbsp hoisin sauce
3 tbsp peanut butter * whatever you have in the cupboard!
1 tsp soya sauce
1/2 tsp ground garlic & ginger
1/2 tsp Sriracha sauce or to taste
3 Ramen ‘pucks’ * I use the ones from Costco but you can use any ramen noodles
Put the veg into a big skillet, I use a wok for room! You don’t need any oil since these veg will give off water because the broccoli is frozen. If you use fresh mushrooms you can sauté them with the red pepper to cook them, then add the broccoli. Cook the veg until the broccoli is defrosted & the water has evaporated. Remove the veg to a big bowl & set aside
Now, cook the ground beef until there isn’t any pink left. Add the hoisin sauce, peanut butter, soya sauce, garlic, ginger, sriracha sauce. Mix well. Cook on low for a few minutes, add the vegetables. Mix well & turn the heat off until the noodles are cooked.
Cook the noodles as per the directions on the packet
When the noodles are just about cooked, it only takes 3 minutes or so, turn the heat on the meat mixture & warm the meat & veg. Add some of the cooking water from the noodles to make a sauce. I started with 1/2 a soup ladle but added more. The amount depends on how ‘saucy’ you want it but you don’t want too much or it will water down the flavour. You can always add more seasonings if you want!
When the noodles are cooked add them to the wok & combine well.
